Today's Lunch--California Panini

This is certainly the most relaxing part of my day.  All three little monkeys are down for naps.  They actually all take fabulous naps, even my three year old.  This is one of my quilting secrets.  I have three whole hours to accomplish so many things in the afternoon.  Sure, I should probably clean the bathrooms, but what is the fun in that?  I have even been asked if I drug my kids to get them to sleep so well.  I promise I do not.  They sleep from 1-4 almost everyday, and it's heaven. 

I generally don't eat lunch until they are down because I want to enjoy what I'm eating.  Today I'm having a California panini.  When I worked full-time there was an Einstein Bagels a few blocks away and we would occasionally have lunch there.  I always ordered their California panini and about started to cry when they discontinued it.  I honestly haven't been there for lunch since.  In an effort to replicate that amazing sandwich I came up with this guy.  It's close, but I'm starting to forget what Einstein's even tasted like.  I really like my version.

2 slices bakery style bread
1 oz cream cheese
smoked paprika
1-2 slices turkey breast
1 slice mozzarella
1-2 slices tomato, seeds removed
2-3 slices avocado
salt and pepper

First mix up your cream cheese spread.  I add a bit of smoked paprika to mine.  Add whatever seasonings sound good.  I have also used minced garlic, Mrs. Dash, a touch of cumin, Italian seasoning or Montreal Chicken seasoning.  (Sorry about the yellow bowl.  We really don't have many adult bowls around here anymore.) 
Mix it up until smooth.
Spread a thin layer on each slice of bread.
Add the rest of the ingredients.
Brush each side with olive oil.  Grill on a panini press or George Foreman grill.  Enjoy!

Now that I have enjoyed my panini and Diet Coke, I'm off to quilt.
