These sandwiches are the main reason I grow basil each summer. They are really fabulous. I thank Giada De Laurentiis for the inspiration. I saw this on the Food Network a few years ago, and we have been making them ever since. I can't find the actual link to the recipe so here is the version as I remember it.
Italian Panini
2 slices bakery style bread (I think the original calls for Ciabatta, but I use whatever good bread I can find)
2 slices turkey breast
1 thick slice mozzarella (use fresh if you have it)
2 slices tomato (seeds removed)
5 basil leaves (cut into strips)
salt and pepper
Arrange ingredients on bread. Brush the outside of the sandwich with olive oil. Grill on a panini press (I just use my little George Foreman grill, and it works great too).
